Caprese Zoodles – No-cook Zucchini Spaghetti Recipe

The caprese zoodles are a very easy vegetarian recipe to make and perfect for hot days as they require no cooking. These are zucchini spaghetti made with a spiralizer or julienne cutter, dressed with cherry tomatoes, mozzarella, and Tropea red onion. Extremely fresh and tasty, they will be perfect for summer lunches and dinners! I generally serve zoodles as a main dish, but they are also great as a side.

  • 4 zucchini
  • 1 Tropea red onion
  • 100 g cherry tomatoes
  • salt
  • black pepper
  • 2 tbsp extra virgin olive oil

Caprese Zoodles Recipe

  • Start preparing the caprese zoodles by washing and drying the zucchini and cutting off the top. Create zucchini spaghetti using a spiralizer or a julienne slicer.

  • Wash and peel the Tropea red onion and finely chop it with a knife. Add it to the zucchini.
    Wash the cherry tomatoes and cut them into quarters.
    Add these to the rest of the ingredients.

  • Season the zucchini spaghetti with salt, black pepper, and extra virgin olive oil. Mix well.

  • Finish the recipe with mozzarella balls. Combine all the ingredients and serve the caprese zoodles immediately.

You can also dress the zucchini spaghetti with a balsamic vinegar vinaigrette or a lemon juice citronette.
