These extremely fragrant treats are the lemon version of the more famous Carnival Arancini.

A soft dough made with flour, milk, eggs, and butter is filled with granulated sugar and lemon zest to create an extremely fragrant treat.

In my leavened pastries, I always use barley malt, and this is no exception: if you can’t find it or don’t want to use it, you can safely omit it.

  • 1 cup all-purpose flour
  • 1/8 cup sugar
  • 1 cup bread flour
  • 1 egg
  • 1/2 cup milk
  • 1 tsp instant yeast
  • 1 tsp barley malt (optional)
  • 2 tbsp butter
  • 1 pinch salt
  • 1 cup sugar
  • zest of 2-3 lemons

Recipe for Carnival Lemon Twists

  • Start preparing the Carnival Lemon Twists by placing the all-purpose flour, bread flour, sugar, and salt in the mixer bowl.
    Give a quick stir with a spoon to combine all the dry ingredients.

  • Dissolve the dry yeast in room temperature milk and add the barley malt (optional ingredient you can omit).
    Slightly beat the egg.
    Add these two ingredients to the mixer bowl as well.

  • Start mixing at medium speed and continue until the dough clings to the hook.

  • Add the soft room temperature butter one teaspoon at a time, waiting for it to be fully incorporated before adding more.

  • Transfer the dough to a lightly floured surface, give two reinforcing folds, then shape into a ball.
    Transfer to a floured bowl and let rise until doubled in size.

  • Weigh the granulated sugar in a bowl and add the zest of 2-3 untreated lemons.
    Mix well and let infuse for at least 30 minutes.

  • Roll out the risen dough on a floured surface with the help of a rolling pin to form a rectangle.

  • Spread the lemon sugar over the dough, making sure to leave 1 cm free on each side.

  • Roll up the dough rectangle from the long side, tightening it well.

  • Cut the lemon twists with kitchen string, slicing the roll into 3/4-inch sections.
    Place the lemon twists on a cutting board or baking sheet and let them rise covered for at least 1 hour.

  • Fry the lemon twists in a fryer or deep pan at 340°F for one or two minutes per side.

  • Drain on kitchen paper towels or paper towels and enjoy the Carnival Lemon Twists immediately.
