Ingredients for Chicken and Corn Soup

  • 10.5 oz Corn (large can)
  • 3/4 cup Fresh cream
  • 10.5 oz Chicken breast
  • 1 carrot
  • 1 yellow onion
  • chives
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper

Chicken and Corn Soup Recipe

  • Start the preparation of the chicken and corn soup by washing and peeling the carrot and onion.
    Chop the onion and dice the carrot.
    If you bought the whole chicken breast, remove bones and cartilage and cut it into cubes.
    Heat two tablespoons of extra virgin olive oil in a pot.
    Add the chicken breast and let it brown well.

  • Add the diced carrot and chopped onion to the pot.
    Drain the corn and add it to the rest of the ingredients.
    Cover with water and cook gently for about twenty minutes.

  • Add the fresh cream and blend the soup more or less coarsely according to your taste.
    Season the soup with salt, black pepper, and chopped chives.

  • Immediately serve the chicken and corn soup accompanied by croutons or toasted bread.
