Recipe for Chocolate Castagnole
Start preparing the chocolate castagnole by placing all the recipe ingredients in the stand mixer’s bowl.
Knead with a spiral hook at medium speed until the dough is fully combined: this will take about 10 minutes.Transfer the dough to a floured pastry board and knead it for a couple more minutes.
You should obtain a smooth, non-sticky ball.
Let it rest covered for about ten minutes.Divide the dough into portions of 25 or 30 g: with these amounts, you’ll get about 14.
Give each piece of dough a spherical shape by rolling it like a meatball.
Preheat the air fryer to 392°F.
Place the castagnole in the basket and cook for 4 minutes (halfway through cooking).Open the basket, turn them over and cook for another 4 minutes (so they should cook for a total of 8 minutes).
Add the zest of an untreated orange to the powdered sugar.
