  • 1 1/8 cups All-purpose flour
  • 6 1/3 tbsps Butter
  • 1/3 cup Sugar
  • 1 egg yolk
  • 1 tsp Baking soda
  • 1 pinch Salt
  • 1 tsp Vanilla extract
  • 1 1/2 tbsps Butter
  • 2 tbsps Brown sugar
  • 1 tbsp Ground cinnamon
  • 1/2 cup Powdered sugar
  • 1 tbsp Milk

Cinnamon Roll Cookies Recipe

  • Begin the preparation of the cinnamon roll cookies by placing all the shortcrust ingredients in the bowl of a blender or food processor, leaving the butter and egg yolk for last.

  • Blend at maximum power until the shortcrust begins to come together; large crumbs should form.

  • Transfer the cookie dough onto a work surface, quickly compact it with your hands to form a dough ball. Let the shortcrust rest in the refrigerator for about an hour.

  • After the resting time, roll out the shortcrust on a sheet of baking paper to a thickness of about 1/8 inch.

  • Melt a pat of butter in the microwave or in a saucepan and spread it over the shortcrust.

  • Continue by adding the brown sugar and cinnamon. Roll up the shortcrust carefully without breaking it and place the roll in the refrigerator for 30 minutes.

  • Cut the roll into pieces about 1/3 inch thick and place the formed cookies on a cookie sheet or a regular baking tray lined with baking paper.

  • Bake the cookies in a static oven at 374°F for about 15-18 minutes. Remove them from the oven even if still soft and let them cool completely.

  • In the meantime, prepare the glaze by adding a tablespoon of milk to the powdered sugar. Mix well, and if the glaze is too hard, add a little more milk.

  • Spread the glaze over the cookies and let it harden for a few minutes. The cinnamon roll cookies are ready to be served!
