The citrus chicken breast is an extremely simple main course to prepare, with an intense citrus aroma thanks to the flavored breading and the accompanying sauce made with oranges and lemons. To cook the meat to the right point, I used a probe thermometer and stopped the cooking once it reached 149°F internally. If you don’t have one, you can certainly still prepare this recipe, although I recommend getting this instrument which has become essential for me.

Start preparing the citrus chicken breast from the flavored breadcrumbs: combine the breadcrumbs, orange and lemon zest, dried oregano, black pepper, and salt in a bowl. Mix well and set aside.

Now take care of the chicken: make sure to remove any cartilage and small bones and remove the underlying tenderloin if present.
You can use it to make BACON WRAPPED CHICKEN BREASTS.
With the help of a kitchen brush, spread the orange marmalade over the chicken breast.
Cover the chicken breast with the citrus-flavored breading and bake it in the oven at 338°F until it reaches 149°F inside, which took about 25 minutes for mine.

Meanwhile, prepare the accompanying sauce. Combine the orange and lemon juice, extra virgin olive oil, mustard (which will act as an emulsifier, binding water and oil), salt, and pepper in a bowl or in the glass of an immersion blender. Mix everything with a whisk or to speed up the process, give a few pulses with the blender.

Serve the citrus chicken breast accompanied by its sauce and a green salad (in my case lamb’s lettuce, which I dressed with the same citrus sauce).

Tips: to make the chicken even more delicious after baking, you can cook it for no more than 5 minutes in a pan or fryer to make the breading even crispier!
