Cod fritters, crispy outside and soft inside, these delightful fritters are perfect as a tasty appetizer or an irresistible finger food for a gathering.
Perfect for Christmas Eve, special occasions, or simply for a family dinner, cod fritters bring the traditional taste to the table. They can be served alone or with a sprinkle of Maldon salt, which adds a crunchy and flavorful note, enhancing the fish flavor. Accompanied by a light dipping sauce, such as citrus mayonnaise or tartar sauce, they become even more irresistible.
The batter is the secret to the success of these fritters. Made with all-purpose flour, ice-cold beer, instant yeast, extra virgin olive oil, salt, and pepper, it ensures unique lightness and crispness. To achieve impeccable results, it is important to dip the desalted cod in the batter just before frying, ensuring each piece is well coated.

Cod Fritters Recipe
Start preparing the cod fritters by handling the fish: if you bought the cod still salted, soak it for 72 hours, changing the water at least twice a day.
Place the all-purpose flour, instant yeast, salt, and black pepper in a bowl.
Mix all the powders well.Gradually pour the ice-cold beer into the bowl while mixing with the whisk.
Finish preparing the batter by adding a tablespoon of extra virgin olive oil.
Mix again with the whisk and let it rest in the refrigerator for 30 minutes.Cut the cod into pieces and with tweezers remove any bones.
Place the cod pieces in the bowl with the batter and mix well: the fish must be completely covered in batter.Heat peanut oil in a pan or fryer.
Add the battered cod with the help of a spoon and fry it until golden brown.Drain the cod fritters on paper towels or frying paper and serve them hot with salt crystals to taste.
