Ingredients for Coffee Cookies
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 1 cup butter (melted)
- 2 tbsp instant coffee
- 2 eggs
- 2 tsp baking powder
- 1 tsp vanilla
- 1 tsp ground cinnamon
- 1 pinch salt
- 1 3/4 oz dark chocolate

Recipe for Coffee Cookies
Start preparing the coffee cookies by handling the dry ingredients.
Place flour, instant coffee, baking powder, salt, cinnamon, and vanilla in a bowl.
Mix well until you get a homogeneous mixture.
Set aside for now.
Melt the butter in a saucepan or microwave and transfer it into a bowl.
Add the sugar – I used a part white and a part brown – and mix the mixture.
Continue by adding the eggs: add them one at a time, fully incorporating the first before adding the second.
At this point, pour the dry mixture into the wet ingredients and mix everything with a spatula. You should obtain a very dense but not malleable mixture.
Chop the dark chocolate and add it to the cookie dough.
Shape the cookies directly onto the oven tray with an ice cream scoop: keep them well spaced as they will spread during baking, I placed 6 of them.
Bake the coffee cookies in a static oven at 356°F for 13-15 minutes or until sufficiently golden.
Remove them from the oven even if they are still soft (in fact, it’s normal) and leave them on the baking sheet for another 5 minutes.
Allow them to cool completely on a cooling rack before serving.

Better not: liquid coffee would alter the consistency of the dough. If you want a more intense aroma, you can dissolve the instant coffee in very few drops of hot water or slightly increase the dose.
How do I keep them soft for longer?
Store them in an airtight container at room temperature, away from heat sources. If you want to keep them soft, add half a slice of bread inside the jar: it will help retain moisture.
Can I add more chocolate or nuts?
Of course! You can enrich the dough with dark, milk, or white chocolate chips, or with chopped nuts, hazelnuts, or almonds for an even more delicious touch.
