Ingredients
- 3.5 oz dark chocolate
- 3/4 cup butter
- 1.5 cups sugar
- 4 eggs (medium)
- 1 tsp vanilla extract
- 1 tbsp food coloring (red gel)
- 1.75 cups all-purpose flour
- 1 tsp salt
- 1/3 cup unsweetened cocoa powder
- 3.5 oz cream cheese
- 2 tbsps powdered sugar

Start preparing the red velvet brownies by melting the butter and dark chocolate in the microwave or a bain-marie.

Transfer to a bowl and let it cool slightly, then add the sugar and mix the ingredients with a whisk.
Also add the eggs – one at a time – the vanilla extract and the red gel food coloring.
I chose gel to avoid altering the batter’s consistency too much. If you use liquid, add a teaspoon of all-purpose flour to the recipe’s measured amount.

Set aside the batter and in another bowl mix all-purpose flour, unsweetened cocoa, and salt.
Combine the dry ingredients with the liquid ones, always stirring with the whisk.
Transfer the batter into a rectangular pan about 11×8 inches and if necessary, level it with a spatula.
Separately, mix 3.5 oz of cream cheese with two tablespoons of powdered sugar.
Add the cheese in spoonfuls onto the brownie batter and create the swirl pattern using a wooden skewer.

Bake the red velvet brownies in a static oven at 350°F for 30/35 minutes.
Remove from the oven, let cool, and divide the dessert into 12 pieces.
