Cucumber kimchi is the easy and much quicker version to prepare of the famous Korean recipe based on fermented cabbage. Not many people know, in fact, that kimchi can be prepared with many different vegetables, including cucumber. As happens very often with traditional Italian recipes, there are endless kimchi recipes in Korea, practically one per family. This recipe is often prepared during kimjang, where relatives, neighbors, and friends gather to enjoy it during the winter.

Ingredients
- 1 cucumber
- 1/2 red onion
- 1 teaspoon garlic powder
- 2 tablespoons hot paprika
- 2 tablespoons bell pepper sauce (chili sauce)
- 1 tablespoon rice vinegar
- 1.5 tablespoons soy sauce
- sesame seeds

Preparing the Cucumber Kimchi

Start preparing the cucumber kimchi by slicing the cucumber lengthwise in half and then into slices.
Transfer it to a bowl, sprinkle with salt, and let it shed its water for at least 30 minutes.
In the meantime, prepare the kimchi sauce: put garlic powder, 1 teaspoon of salt, hot paprika, and chili sauce in a bowl. Mix well, then add the rice vinegar and soy sauce.
Peel half a red onion and slice it thinly.
After half an hour, drain the cucumbers from their water.
Add the sliced red onion and mix the two ingredients well.
Also add the kimchi sauce and mix well.
Finish preparing the cucumber kimchi by garnishing with sesame seeds.
Serve immediately or store in the fridge in an airtight container.

Tips: if you don’t like spicy food, use sweet paprika and a sweet chili sauce that is not spicy. Instead of onion, you can use fresh scallion including its green part.
