- 2 tbsps extra virgin olive oil

Eggplant and Feta Pasta Recipe

Start preparing the eggplant and feta pasta by washing the eggplant and removing the top part. Cut it into cubes and place it in a baking dish previously greased with a bit of extra virgin olive oil.
Season the eggplant with salt, black pepper, dried oregano, and extra virgin olive oil and bake in a static oven at 450°F for 20 minutes.
Take the baking dish from the oven, add the feta, and season it with a bit of extra virgin olive oil. Put it back in the oven this time at 400°F for about 15 minutes.
Once cooked, mash the feta with a spoon and mix it with the eggplant.
Cook the pasta in salted boiling water.
Add it to the sauce and stir well. To make it creamier, add a bit of pasta cooking water.
Serve the eggplant and feta pasta immediately.
