These sticks are naturally vegan and lactose-free, so they are perfect for everyone! The air fryer cooking gives these sticks great crispiness even without using oil or other fats.
And the credit also goes to the panko, a type of breadcrumb typical of Japanese cuisine that, unlike our breadcrumbs, is not made from coarse grains but from bread flakes that make every dish extremely crispy.

Ingredients
- 1 black oval eggplant
- 1/2 cup all-purpose flour
- 3/4 cup almond milk
- 1/2 cup panko
- 1/2 teaspoon garlic powder
- to taste salt
- to taste black pepper
- to taste parsley

Eggplant Sticks Recipe
Start preparing the eggplant sticks in the air fryer by washing the eggplant and slicing it lengthwise.
Cut each slice into sticks that are not too big.Prepare the batter with flour, water, garlic powder, and salt.
Mix with a whisk, being careful not to leave lumps of flour.Season the panko with salt, black pepper, garlic powder, and chopped fresh parsley.
Dip the eggplant sticks first in the batter and then in the panko.
Press well so that the breading adheres perfectly.Preheat the air fryer to 392°F.
Arrange the eggplant sticks in the basket without overlapping them.Cook the eggplant sticks for 10-12 minutes, turning them halfway through.
I suggest avoiding using a parchment or silicone baking sheet because they would not become crispy.
Serve immediately and finish with flaked salt and sauces of your choice.

Can I substitute the panko?
Of course, you can use simple breadcrumbs. My advice is to use corn breadcrumbs, which have a coarser grain and become crispier when cooked.
What sauces do you recommend?
I chose a mayonnaise thinned with sriracha sauce, a spicy sauce. You can also opt for fresher condiments like tzatziki sauce.
