Flavorful chicken breast with onion, tomato, and smoked scamorza, a main dish made with genuine ingredients, simple and delicious.
This chicken entrée is an original and flavorful recipe: to the pan-cooked chicken breast, melted smoked scamorza, onion cooked in balsamic vinegar, and seared oxheart tomato are added. The result is a simple and genuine dish with guaranteed success.
For this recipe, I used Tropea red onion; if you have trouble finding it, I recommend substituting with white onion or fresh scallion.
If you are serving the dish to small children, use sweet scamorza and cook the onion without vinegar (alternatively, you can omit it, which is what I do with my child).

Ingredients for the Flavorful Chicken Breast
- 1.3 lbs chicken breast
- 1.8 oz smoked scamorza
- 1 Tropea red onion
- 2 tbsps balsamic vinegar
- 1 oxheart tomato
- to taste Salt
- to taste Black pepper
- to taste Extra virgin olive oil

Flavorful Chicken Breast Recipe
Start preparing the flavorful chicken breast with the onion.
After peeling it, cut it in half lengthwise and then into thin slices, place it in a pan with a drizzle of extra virgin olive oil, salt, and black pepper.Sauté it for a couple of minutes, add the balsamic vinegar, and cook on low heat for about ten minutes. Remove it from the pan and set aside.
Wash and slice the oxheart tomato into slices about 1/4 inch thick.
Place it in the same pan as the onions with a tablespoon of extra virgin olive oil.Sear the tomato slices for a couple of minutes on each side over high heat.
Season with salt and also set the tomato aside.Place the chicken in the pan with a tablespoon of oil.
Cook it for about 5 minutes, flip it, and season it with a little salt.
Continue cooking for another 3 minutes.Add the sliced scamorza and cover the pan with a lid for a couple of minutes, just enough time to melt the cheese.
Continue the preparation of the chicken by placing the previously cooked onion on top of the scamorza.
Finish the preparation with the oxheart tomato slices.
All that’s left is to serve the chicken breast stuffed with onion, scamorza, and tomato.
