  • 1/2 cup Parmesan cheese (grated)
  • 1/2 cup almond flour
  • 1/4 cup bread crumbs
  • salt
  • black pepper
  • 1/2 teaspoon garlic powder

Recipe for Fried Zucchini with Parmesan

  • Start preparing the fried zucchini with Parmesan by washing the zucchinis and cutting off the top with a knife.
    Create noodles with a spiralizer or finely julienne them with a mandolin.

  • Transfer the zucchinis to a bowl, add salt, and let them drain their water.
    Squeeze them well, remove the water, and add black pepper and garlic powder.
    In the bowl with the zucchinis, add bread crumbs, almond flour, and grated Parmesan cheese. Mix well until all the ingredients are completely combined.

  • Heat peanut oil in a pan or fryer to 356°F. Fry the zucchinis until the “coating” becomes golden.

  • Drain the fried zucchini with Parmesan on kitchen paper or paper towels and serve immediately.
