  • Start preparing hash brown potatoes by washing and peeling the potatoes with a peeler.
    Grate the potatoes onto a kitchen dish towel using a coarse grater.

  • Peel the onion and grate it with the same grater onto the dish towel.

  • Squeeze the grated potatoes and onion well to remove as much liquid as possible.

  • Transfer everything into a bowl and adjust with salt and black pepper.

  • Beat a medium-sized egg and add it to the potatoes.

  • Mix with a spatula or spoon until the egg is fully blended with the other ingredients: you need to get a fairly sticky mixture that holds together when scooped with a spoon.

  • Heat the peanut oil in a pan.
    Add a spoonful of the mixture and flatten it with the back of the spoon.
    Cook until the pancake is nicely golden, which will take about 3 minutes.
    Flip the pancake and cook on the other side for the same time.

  • Blot the hash brown potatoes with paper towels to remove excess oil and serve them immediately.
