The lemon and amaretti dessert is a spoon dessert that is very easy to prepare and does not require cooking. A very fresh dessert perfect as a meal finisher. It consists of layers of amaretti soaked in water and lemon juice and a cream made with ricotta and whipped cream – very light, almost like a mousse – always lemon-scented. Its preparation will take you very little time and give you a lot of satisfaction!

- 1 cup heavy cream
- 1/4 cup sugar
- 1 lemon (zest and juice)
- 7 oz amaretti

Start the preparation of the lemon and amaretti dessert by placing ricotta (I used cow’s milk ricotta but buffalo ricotta is also fine), sugar, and the zest of an untreated lemon (organic or labeled as “edible peel”) in a bowl.
Soften the ricotta with a kitchen spatula and mix until it has fully incorporated the other ingredients.
Separately, whip the heavy cream with electric whisks.
Add it to the softened ricotta and mix everything with the spatula with gentle movements: you need to obtain almost a kind of fluffy, airy mousse.
Continue the recipe by squeezing the lemon and placing the juice in a small bowl with an equal amount of water.
Mix well and use this soak to soften the amaretti, it will only take a few seconds.
Transfer the ricotta cream into a pastry bag.
Now all you have to do is assemble the dessert: put a layer of amaretti, then a layer of cream in a glass or small bowl.
Continue until the glass is full.
Finish with some crumbled amaretti.
Let the lemon and amaretti dessert rest in the refrigerator for at least 30 minutes before serving.

If you don’t like ricotta, you can replace it with mascarpone or spreadable cream cheese.
If instead, you want a firmer cream, use mascarpone – or spreadable cream cheese – instead of heavy cream
