  • 1.1 lbs chicken breast
  • 1 tbsp lemon zest
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • 1 tbsp cornstarch
  • 1 sprig rosemary
  • 1 clove garlic
  • 3.4 tbsps lemon juice
  • 1 tsp cornstarch
  • 1 packet saffron

Preparation of Lemon and Saffron Chicken

  • Start preparing the lemon and saffron chicken by marinating the chicken breast.
    After cutting it into cubes, place it in a bowl and season with salt and black pepper.
    Add a sprig of rosemary and a crushed garlic clove.

  • Add a tablespoon of cornstarch to the bowl and mix well with a spoon.
    Transfer the covered chicken to the refrigerator and let it marinate for 30 minutes.

  • Meanwhile, prepare the saffron dressing.
    Put a teaspoon of cornstarch and the packet of saffron in a small bowl.

  • Add the lemon juice and mix well with a whisk, ensuring the cornstarch is dissolved.

  • Heat two tablespoons of extra virgin olive oil in a pan.
    Put all the contents of the chicken bowl into the pan.

  • Let the chicken brown well, cooking it for about 7-10 minutes and stirring occasionally.

  • Remove the garlic clove and pour the lemon and saffron sauce into the pan.

  • Cook for another 5 minutes over low heat, stirring occasionally.
    Transfer the lemon and saffron chicken to plates and garnish with fresh rosemary.
