- 1/2 cup butter (soft)
- 3/4 cup sugar
- 1 egg (size M)
- 1 lemon (zest and juice)
- 1 pinch baking powder

Lemon Cookies Recipe
Start preparing the lemon cookies by creaming sugar and butter with an electric mixer.
Add a medium egg, the zest of an untreated lemon, and two tablespoons of lemon juice.
Mix again to combine these ingredients.
Add in the baking powder and all-purpose flour.
Mix until you get a homogeneous mixture: don’t worry if it’s not malleable, it’s normal for this kind of recipe.
Scoop the dough with an ice cream scoop and place it directly on the baking sheet (covered with a mat or parchment paper). Space the dough balls well, do not make more than six at a time.
Bake the lemon cookies in a preheated static oven at 340°F for 12-13 minutes.
Remove from oven and leave them on the hot baking sheet for another 5 minutes.
Transfer the lemon cookies to a cooling rack until completely cooled, then store them in an airtight container.
