Ingredients
- 2.7 fl oz Lemon juice (about one untreated)
- 2 tablespoons Lemon zest (finely grated)
- 1/3 cup Sugar
- 2 Medium eggs
- 3.5 tablespoons Butter
Preparation of the lemon curd
Preparing the lemon curd is really easy and won’t take you long. Start by grating the lemon zest and then squeeze it with a citrus squeezer and strain the juice through a fine mesh sieve.
Put the sugar, lemon juice, lemon zest, and two eggs in a bowl: mix everything well with the whisks until the eggs are well beaten.
Transfer everything to a saucepan, add the butter cut into cubes, and cook over low heat, always stirring with a whisk: the lemon curd will be ready when it has reached a consistency similar to that of custard.
Transfer the sauce into a low-rimmed container and cover it with cling film in contact: set aside until it has cooled.
At this point, the lemon curd is ready: transfer it to a glass jar and store it in the refrigerator for 2 or 3 days!
