Ingredients for Lemon Turkey Rolls

  • 14 oz turkey breast
  • 2 slices white bread
  • 1 tbsp grated Parmesan
  • 1 lemon (zest and juice)
  • 1 clove garlic
  • chives (4-5 sprigs)
  • to taste salt
  • to taste black pepper
  • 2 tbsps extra virgin olive oil

  • Bowls
  • Toothpicks

Recipe for Lemon Turkey Rolls

  • Start the preparation of the lemon turkey rolls by briefly blending the slices of white bread.
    Add the crumb to a clove of garlic without the inner germ, chives, the zest of an untreated lemon, salt, and black pepper.

  • Add a drizzle of extra virgin olive oil.
    Blend again to obtain a homogeneous mixture.
    Set aside and move on to the meat.

  • If the turkey slices are too thick, tenderize them with a meat tenderizer, being careful not to tear them.
    Then cut each slice into two or three pieces, depending on its size.
    Brush each slice with a little extra virgin olive oil.

  • Add a spoonful of lemon-flavored crumb and roll the meat onto itself, pressing it simultaneously with your hands.
    Close the roll with a toothpick.
    Repeat the steps for all the meat slices.

  • Heat a couple of tablespoons of extra virgin olive oil in a pan.
    Place the rolls in the pan and sear them on all sides.
    Add the lemon juice and half a glass of water.
    Cook over low heat for about ten minutes.

  • At the end of cooking, if you like, you can add some leftover crumb to make it crunchy.

  • At the end of cooking, finish the preparation with some chopped chives.

  • Serve the lemon turkey rolls immediately while hot.
