Start preparing the oriental fried chicken by cutting the chicken breast into cubes of more or less the same size.
You can also use chicken tenders.Place the cubed chicken in a bowl and season it with soy sauce, mirin, black pepper, garlic powder, and ginger.
Mix well, all the chicken cubes should be perfectly seasoned.Now, focus on preparing the batter.
Put the all-purpose flour, cornstarch, and a medium-sized egg cold from the refrigerator in a bowl.Start mixing with a spoon or hand whisk and begin to pour in the sparkling water in a stream.
Continue until you get a smooth, lump-free batter.Pour the chicken into the freshly prepared batter and mix so that all the chicken is coated with batter.
Heat a fryer (you can also use a pan or a pot for frying) to 338°F.
Add the chicken a few pieces at a time and cook it for 5 minutes; it should become golden and crispy.Once cooked, let the chicken dry from excess oil on absorbent paper or paper towels.
Serve the oriental fried chicken immediately while hot.
