- 1 cauliflower (small)
- 4 tbsps grated parmesan
- 4 tbsps extra virgin olive oil
- 0.7 oz raisins
- to taste salt

Pasta with Cauliflower Cream Recipe

Start preparing the pasta with cauliflower cream by cleaning the cauliflower and cutting it into florets. Cook it in boiling water or steam it until it becomes soft, which will take about 15-20 minutes.
Transfer the cooked cauliflower to a food processor and add the grated parmesan.Adjust the salt and add the extra virgin olive oil to the bowl.
If you like, you can also add black pepper or other spices to taste.Blend everything until you obtain a fairly smooth and soft cream; if necessary, add a bit more extra virgin olive oil.
Soak the raisins in warm water for 30 minutes.
Cook the pasta in salted boiling water.
Drain it directly into a frying pan that has been on the stove for two minutes with the extra virgin olive oil.
Add the cauliflower cream and start mixing, adding a bit of the pasta cooking water as needed.After draining, add the soaked raisins to the pan.
Serve the pasta with cauliflower cream immediately and very hot, decorating the plate as desired with some chopped chives and/or hazelnut crumbs.
