Start preparing the pasta with eggplant and sweet Italian peppers from the vegetables: after washing everything, cut the eggplant into cubes, the peppers in half lengthwise, and the onion first in half and then into slices.
Transfer the vegetables to an oiled baking dish and season them with salt and black pepper.Bake everything in a fan oven at 392°F for about 30 minutes.
Meanwhile, cook the pasta in plenty of salted water.
Also cook the bacon in a frying pan with a little extra virgin olive oil.
Add the roasted vegetables to the pan and let it cook for a couple of minutes.Drain the pasta al dente and save some cooking water.
Pour the pasta into the pan.Season the pasta with grated Parmesan cheese, mix all the ingredients using a ladle of cooking water.
Add a bit more black pepper and serve the pasta with eggplant and sweet Italian peppers immediately.
