Peach and Amaretti Dessert, a no-bake spoon dessert perfect for sweetly concluding a lunch or dinner with company, perhaps outdoors, taking advantage of the seasonal nectarines.
It’s a simple recipe with a few genuine ingredients, but it’s sure to win you over at the first taste: soft and creamy layers of ricotta and cream alternate with the sweetness of peaches and the crunchiness of crumbled amaretti. A balance of textures and flavors that always works, especially when you’re in the mood for a fresh and light yet indulgent dessert.
The preparation is really easy and requires no cooking: whip the cream, combine it with the ricotta worked with a bit of sugar and lemon zest, then assemble the dessert by layering cream, peaches, and amaretti. In a few minutes, the dessert is ready to be placed in the fridge: you can also prepare it in advance, so it’s already ready.

Recipe for the Peach and Amaretti Dessert
Start the preparation of the peach and amaretti dessert by washing the nectarines.
I decided to leave the skin on, but you can easily remove it if you prefer.
Slice the peaches and set them aside.Work the ricotta in a bowl with the sugar and the zest of one untreated lemon.
Add the cream to the bowl with the ricotta.
Whip the mixture with the whisk until you get a cream.Put the amaretti in a food bag and crush them with a rolling pin or meat tenderizer; you need to obtain a crumb.
Assemble the dessert: start with a layer of ricotta cream.
Continue with the peaches, and finally add the amaretti crumbs.Repeat the steps for another layer.
Store the peach and amaretti dessert in the refrigerator until serving or bring it straight to the table.

FAQ (Frequently Asked Questions)
Can I replace nectarines with another type of peach?
Yes, you can use yellow or white peaches, as long as they are ripe but firm. Avoid those that are too watery or too soft so as not to compromise the texture of the dessert.
How far in advance can I prepare the dessert?
You can prepare it 6–8 hours in advance and keep it in the refrigerator until serving. In fact, resting in the fridge allows the flavors to meld even better.
Can I substitute ricotta with another cheese?
If you prefer, you can use mascarpone or cream cheese, but the result will be richer and less light. Ricotta remains the ideal choice for a fresh and delicate summer dessert.
