Ingredients for Pork Loin with Tuna Sauce

  • 1.1 lbs pork loin (thin slices)
  • 4.2 oz canned tuna in oil
  • 5 fillets anchovies
  • 3 tbsp mayonnaise
  • 2 tbsp lemon juice
  • 1 sprig basil
  • as needed salt
  • as needed extra virgin olive oil

Pork Loin with Tuna Sauce Recipe

For the sauce, you can also follow the recipe for QUICK TUNA SAUCE.

  • Start preparing the pork loin with tuna sauce by cooking the meat. After patting it dry with some paper towels, cook it in a pan with a drizzle of olive oil for 2-3 minutes on each side. Set aside. Drain the tuna in a strainer.

  • Place the drained tuna, anchovies, mayonnaise, lemon juice, and a few basil leaves in a blender. Blend until smooth. Taste and add more lemon juice if needed.

  • Arrange the pork loin slices on a serving plate. I put a bit of salad on the bottom, but it’s optional. Spread the sauce evenly over the meat slices.

  • Garnish the dish with a sprig of basil and serve the pork loin with tuna sauce immediately, or store it in the refrigerator until ready to serve.
