Ingredients for Potato and Broccoli Croquettes

  • 1.1 lb potatoes
  • 3 1/3 cups broccoli florets
  • 1 egg
  • 6 2/3 tbsp breadcrumbs
  • 6 tbsp Parmigiano Reggiano PDO, grated
  • pinch nutmeg
  • to taste salt
  • to taste black pepper

Recipe for Potato and Broccoli Croquettes

  • Start preparing the potato and broccoli croquettes by cooking the potatoes and broccoli separately in boiling water or steamed.
    Drain well and let cool slightly, peel the potatoes and place everything in a bowl.

  • Mash the broccoli and potatoes together for a couple of minutes, taking care not to leave whole pieces of potato.

  • Season the two ingredients with salt, black pepper and nutmeg.
    Then also add the grated Parmigiano Reggiano and mix well.

  • Continue by adding the egg.
    For convenience I add it already beaten into the mixture.

  • After fully incorporating the egg into the rest of the mixture, finish the preparation with the breadcrumbs.
    You should obtain a non-sticky, soft mixture; be careful not to make it too dry.

  • Shape the croquettes; I use an ice cream scoop to make them more or less the same size.

  • Cook the croquettes: you can do this either in the oven or in the air fryer.
    Arrange the croquettes on a baking tray or in the air fryer basket and spray them with a little extra virgin olive oil.

  • Cook the potato and broccoli croquettes at 356°F for 10 minutes, turning them halfway through.
    Serve immediately.
