  • 1.1 lbs Delica pumpkin
  • 2 tbsps fresh spreadable cheese
  • 1 yellow onion
  • 2 tbsps extra virgin olive oil
  • 1 sprig sage
  • 1 sprig rosemary
  • to taste black pepper

Recipe for Pumpkin Risotto-Style Pasta

  • Start preparing the pumpkin risotto-style pasta by cutting the pumpkin into large pieces after removing the skin and seeds.
    Peel and quarter a yellow onion.
    In a large pot, add two tablespoons of extra virgin olive oil.
    Add the pumpkin, onion, a sprig of rosemary, and a sprig of sage.
    Sauté everything for 5 minutes.

  • Cover the pumpkin with boiling water and cook for about 25-30 minutes or until the pumpkin becomes very soft.
    Add more water if needed.
    Remove the herb sprigs from the pot and mash the pumpkin with a fork or blend it if you want a smoother cream.

  • Add the pasta to the pot with the pumpkin and stir quickly to mix it with the sauce.

  • Cover the pasta with salted boiling water or vegetable broth and cook it for the time indicated on the package just as you would for a risotto: stir occasionally and add water or broth as needed.

  • Once the pasta is cooked, turn off the stove and add the fresh spreadable cheese and a bit of black pepper.

  • Transfer the pumpkin risotto-style pasta to plates, add a drizzle of raw extra virgin olive oil, and serve immediately.
