Start the preparation of the savory parmesan castagnole by melting the butter in a small pan or in the microwave.
Let it cool slightly.
Place the all-purpose flour, instant yeast for savory preparations, salt, black pepper, and grated Parmigiano Reggiano in a bowl.If you use very aged cheese, reduce the amount of salt to half a teaspoon.
Mix with a spoon to combine all the powders.Add to the dry ingredients the room-temperature milk, cooled melted butter, and a beaten egg.
Knead first with a spoon and then with hands until you get a smooth and non-sticky dough.
Divide the dough into 8 parts and shape four or five balls of about 1-1.5 inches in diameter from each.
Continue until all the dough is used.Fry the savory parmesan castagnole in deep oil in a pot or in a fryer at 340°F for about 3-4 minutes or until they become nicely golden.
Drain them on greaseproof paper or kitchen paper before serving.
