Savory Parmesan Churros, the perfect savory version for appetizers and aperitifs of the famous Spanish recipe.

Like the sweet version, these are fried sticks of choux pastry with a dough enriched by grated Parmigiano Reggiano. The preparation is the same as the sweet ones with the dough being piped using a pastry bag and fried in hot oil.

  • 8 tbsp tbsp butter
  • 1/2 cup cup Parmigiano Reggiano DOP
  • 1 tsp salt
  • 2 eggs
  • peanut oil (for frying)

Recipe for Savory Parmesan Churros

  • Begin the preparation of the savory parmesan churros by bringing the water to a boil.
    Add a teaspoon of salt and the butter, which should melt completely before continuing with the recipe.

  • Continue the preparation by adding the all-purpose flour: mix well until you obtain a solid mixture that detaches from the sides of the pot.

  • Turn off the burners and add the Parmesan to the churros dough.

  • Mix again until the cheese is completely incorporated.
    Transfer everything into a bowl and let it cool.

  • Once the dough is cool, add the eggs.
    Add one, fully incorporate it into the dough, then add the other and mix again until you get a homogeneous dough.

  • Transfer the mixture into a pastry bag fitted with a star nozzle.

  • Heat the peanut oil in a small pot or deep fryer to 338°F.
    Form churros about 2 inches long, letting them fall directly into the pot and using kitchen scissors if necessary.
    Cook until they become golden brown.

  • Drain the churros on frying paper or kitchen paper towels.
