Savory Rosemary Fritters

Savory rosemary fritters, a savory version of the typical Carnival recipe perfect to serve as an appetizer or aperitif alongside cured meats and cheeses, but also delicious on their own!

These fritters are quite simple to prepare, especially if you have a pasta machine.

You can flavor the savory fritters with some white wine or Marsala; I didn’t add anything because I have a small child, but this addition will make your fritters even better!

Ingredients for Savory Rosemary Fritters

  • 2 cups all-purpose flour
  • 2 eggs (1 whole and 1 yolk)
  • 0.88 oz butter
  • 2 tbsp water
  • 1 tsp salt
  • to taste black pepper
  • 1 sprig rosemary
  • peanut oil (for frying)

Recipe for Savory Rosemary Fritters

  • Start preparing the savory rosemary fritters by weighing the all-purpose flour in a bowl.
    Finely chop the rosemary and add it to the flour.
    Also add the black pepper to the bowl.

  • Continue the preparation by adding one whole egg, one yolk, the butter, and a small glass of water.
    If you wish, you can also add half a small glass of white wine.

  • Work the dough by hand or in a stand mixer until you get a smooth, non-sticky ball.
    If the dough is too dry, add a little more water.
    Otherwise, add more flour.

  • Divide the dough into sections to work with it more easily.

  • From each section, form a ball to pass through the pasta machine from the thickest setting 1 to setting 5, the second thinnest (with setting 6 the rosemary would break the dough).
    Alternatively, you can roll out the dough by hand to a thickness of 0.04 to 0.08 inches.

  • Fry the savory rosemary fritters in a fryer at 356°F or in a deep pan with hot oil for about 3-4 minutes, until they are well golden.
    Drain the fritters from the excess oil on parchment paper or kitchen paper.
    Complete with some salt flakes if desired.
