Savory waffles, the savory variant of the famous waffles, the Belgian-origin waffles usually served at breakfast with butter, fruit, and maple syrup. They are an alternative to pancakes, sandwiches, focaccia… and can be served at your appetizers or brunches but are also perfect for lunch at the office or for picnics!
This version, in particular, is made without butter. To make it completely lactose-free, replace milk with an unsweetened plant-based beverage.

Savory Waffle Recipe
Start preparing the savory waffles by placing the all-purpose flour, grated parmesan cheese, instant yeast for savory preparations, and black pepper in a bowl.
Mix with a spoon or whisk to combine the dry ingredients and try to break up any lumps of flour.
Set aside.In another bowl, break two medium-sized eggs and add a teaspoon of salt.
Beat the eggs with a fork or whisk until you get a homogeneous mixture.Add the sunflower oil, milk, and water to the bowl with the eggs.
Beat the mixture with a whisk until it is completely homogeneous.At this point, you can add the dry ingredients to the wet ones, two or three spoonfuls at a time, mixing each time before adding more.
You need to obtain a smooth and thick batter.Heat the waffle maker and grease the cavities with oil or a little cake release spray.
Pour a couple of scoops of batter into the cavities (I used a 2-inch ice cream scoop) and close the waffle maker.Cook the savory waffles for 4 or 5 minutes depending on the desired level of browning.
Remove them from the waffle maker gently with a spatula and repeat the operation until you finish the batter, greasing the cavities as needed.
Serve the savory waffles with cold cuts, cheese, fish, or even with your favorite salad!

How long do they last?
You can store savory waffles in an airtight container in the refrigerator for 4-5 days or in the freezer for 3 months.
To make them crispy again, put them in the oven or a toaster for a few minutes.
The batter, on the other hand, keeps for 2-3 days in the refrigerator.Can I use other types of flour besides all-purpose?
Sure, you can use any flour you want. I recommend type 1 or 5 or 7 grains for a more rustic flavor.
Can I add herbs to the batter?
Of course, you can enrich your batter with basil, chives, or parsley.
