- 1 zucchini (small)

Begin preparing the savory zucchini scones by placing all the dry ingredients in the food processor’s bowl, namely the all-purpose flour, baking powder, sugar, salt, and baking soda.
Cut the butter into cubes – it must be very cold – and add it to the rest of the ingredients.
Blend until obtaining a sandy mixture.At this point, add the egg and sour cream to the food processor and blend again until the dough has come together.
Grate the zucchini and the cheddar. Place them in a bowl and mix them with a tablespoon of flour.
Transfer the dough to a floured pastry board and add the zucchini with the cheddar.Knead by hand until obtaining a homogeneous non-sticky dough.
Roll out the dough with the rolling pin until you have a circle approximately 8 inches in diameter.
Divide the circle into 8 wedges with a dough scraper or knife.
Transfer the scones onto the baking sheet lined with silicone mat or parchment paper.
Bake the savory zucchini scones in a preheated oven at 392°F for about 22-25 minutes or until they are golden brown.
Let them cool slightly before serving.

You can use an equal amount of mascarpone soured with a few drops of lemon juice.

The most suitable cheese is Edam. I advise against using cheeses with a very sweet taste.
