  • 0.5 cup white wine
  • 1 clove garlic

Recipe for Shrimp Risotto in Instant Pot

  • Start preparing the shrimp risotto in the Instant Pot by setting the machine to SAUTÉ mode.
    Add the oil and 1 tbsp of butter along with a crushed clove of garlic.
    Add the shrimp and sear them for just half a minute.

  • Remove the shrimp from the pot and add the rice: toast it for a couple of minutes.
    Deglaze with the white wine.

  • When the wine has completely evaporated, add the vegetable broth.
    Mix well and seal the pot with its lid.

  • Set the Instant Pot to PRESSURE COOK mode on low pressure for 8 minutes.
    Once the program is finished, immediately open the valve, being careful not to burn yourself.

  • Open the lid of the Instant Pot and finish the risotto with the remaining butter and, if desired, white or black pepper.
