Start the preparation of the single-serving lemon cake by washing and cutting off the stem end of an untreated lemon with edible peel, cut it into pieces and place it in a blender along with 1/4 cup of water.
Blend everything and set aside.
I used this blender –> Ariete Pimmy 500W, Hand blender, 3 in 1, 500 W, 1 speed, Turbo function, Triple blade, White
Add sugar to 3 medium eggs and whip by hand or with an electric mixer.
Also add the sunflower oil slowly while continuously mixing.
Continue with the blended lemon.
Once the lemon is added, sift the dry ingredients and add first the potato starch, then the all-purpose flour with the baking powder to the rest of the batter.
Mix well, trying to eliminate all lumps.
Transfer the batter into a 12-cup muffin tray with the cupcake liners. You can use a spoon, a pastry bag, or, as I did, an ice cream scoop.
