Ingredients

  • 1 lemon (untreated)
  • 1/4 cup water
  • 3 eggs (medium)
  • 1/2 cup sugar
  • 1/4 cup sunflower oil
  • 1/4 cup potato starch
  • 1 2/3 cups all-purpose flour
  • 1 packet baking powder

  • Start the preparation of the single-serving lemon cake by washing and cutting off the stem end of an untreated lemon with edible peel, cut it into pieces and place it in a blender along with 1/4 cup of water.

    Blend everything and set aside.

    I used this blender –> Ariete Pimmy 500W, Hand blender, 3 in 1, 500 W, 1 speed, Turbo function, Triple blade, White

    Add sugar to 3 medium eggs and whip by hand or with an electric mixer.

    Also add the sunflower oil slowly while continuously mixing.

  • Continue with the blended lemon.

    Once the lemon is added, sift the dry ingredients and add first the potato starch, then the all-purpose flour with the baking powder to the rest of the batter.

    Mix well, trying to eliminate all lumps.

  • Transfer the batter into a 12-cup muffin tray with the cupcake liners. You can use a spoon, a pastry bag, or, as I did, an ice cream scoop.

    Bake the single-serving lemon cake in a preheated static oven for 20/25 minutes.

    Check the baking with a toothpick before taking the cakes out of the oven.

Tips: you can store the cakes under a glass dome or in an airtight container for 3-4 days. They are suitable for freezing and can be kept in the freezer for about 2-3 months.
