  • 2/3 cup granulated sugar
  • 3 eggs
  • 2/3 cup olive oil (mild flavor)

Recipe for Soft Olive Oil Ring Cake

  • Start preparing the soft olive oil ring cake by cracking the eggs into a bowl. Add the sugar as well.

  • Beat everything with an electric mixer for at least two minutes.
    The mixture should double in volume.

  • While continuing to mix, slowly stream in the olive oil.
    Choose a mild-flavored oil.

  • Do the same with the milk.
    If you are lactose-intolerant you can use an unsweetened plant-based milk.

  • Sift the all-purpose flour and the baking powder into the bowl with the wet ingredients.

  • Now flavor the cake: I chose orange zest but you can use whatever you prefer.

  • Transfer the batter into a well-greased pan.
    Use an 8-inch (20 cm) pan for a taller cake. If you prefer a lower cake, opt for a 9-inch (22–23 cm) pan.

  • Bake the soft olive oil ring cake in a preheated conventional oven at 356°F for 40 minutes.
    Test for doneness before removing: if a toothpick inserted into the cake comes out clean, the cake is ready.
    Let the cake cool for 10 minutes before removing it from the pan.
