Start preparing the soy sauce marinated chicken by placing the chicken breast in a bowl.
Add the soy sauce, rice vinegar, ground ginger, and cornstarch.
Finish with a clove of grated or crushed garlic using a garlic press.Mix well until all the ingredients are combined and the chicken is completely covered.
Let marinate covered in the refrigerator for 30 minutes.Heat some extra virgin olive oil in a pan (even better if you can find sesame oil). Pour in the marinated chicken and cook for 5 minutes: a nice crust should form on the meat.
Turn the chicken and cook for another 5 minutes.
After cooking, you can add some white sesame seeds and the green part of a scallion to the chicken.
Serve the soy sauce marinated chicken immediately at the table.
