  • Start preparing the stuffed pastries with spinach and caramelized onion by cleaning and slicing two golden onions into thin slices.
Heat a couple of tablespoons of extra virgin olive oil in a pan.
Add the onions, season with salt and black pepper, and let them soften for 5 minutes.

  • Add the brown sugar to the pan and caramelize the onions for about 10 minutes, stirring occasionally.
Set aside and let them cool slightly.

  • In the same pan, cook the ground pork with extra virgin olive oil, salt, and black pepper. If you like, you can add a bit of nutmeg.

  • Wash and dry the baby spinach thoroughly and remove the stems.
Let them wilt in the pan for a few seconds and remove from heat immediately.

  • Divide a rectangular puff pastry roll into 4 or 6 pieces.
Fill each rectangle with spinach, then add the caramelized onion, pork, and a bit of pizza mozzarella in that order.

  • Close the pastries by rolling the puff pastry onto itself and place them on a baking tray.
Score a cross on each pastry.

  • Finally, brush each pastry with the beaten egg.

  • Bake the stuffed pastries with spinach and caramelized onion in a preheated fan-assisted oven for 20-25 minutes or until they are nicely golden.

FAQ (Frequently Asked Questions)

  • Can I prepare the pastries in advance?

Yes, you can prepare the pastries a few hours ahead and store them in the fridge, covered with plastic wrap. I recommend baking them just before serving to keep the pastry crispy.
