Recipe for Summer Bruschetta with Peaches, Prosciutto, and Burrata
Start preparing the summer bruschetta with peaches, prosciutto, and burrata by washing the nectarines and slicing them in half. Remove the central pit and then cut each half into thin slices.
Melt a knob of butter in a pan, add the peaches and cook them for a couple of minutes over high heat, stirring often.
Transfer them to a small bowl and set aside.Slice the bread into slices about 0.6-0.8 inches thick and brush them with oil on both sides.
Toast the bread slices in a pan for about 3 minutes on each side.Place the burrata in a bowl and tear it with your hands.
Begin assembling the bruschetta: distribute a spoonful of burrata on the bread.Continue with one or two slices of prosciutto; I used Norcia prosciutto.
Add two or three slices of peaches on the bruschetta.
Finish with a bit of balsamic glaze and fresh basil.
Serve the summer bruschetta with peaches, prosciutto, and burrata immediately.
