Summer Charcuterie Board, a cold platter that combines genuine flavors, quality ingredients, and a well-curated presentation, perfect for aperitifs or an informal outdoor dinner.
In this summer version, I paired cured meats like prosciutto, rolled pancetta, and PDO Piacenza coppa with buffalo mozzarella, cherry tomatoes, seasonal fruit, and raw vegetables. The result? A balanced mix of sweet and savory, soft and crunchy, ideal for tackling the heat without sacrificing taste.
The juicy and fragrant nectarine adds a fresh and fruity note that goes perfectly with the cured meats. The thinly sliced raw Romanesco zucchini provides crunch and a green touch that adds color to the platter. The cherry tomatoes, along with the buffalo mozzarella, bring summer to the table with their simplicity.
The beauty of the charcuterie board is that it’s prepared in a few minutes, can be customized according to seasonal ingredients, and always looks great. It’s perfect for an appetizer with friends, a picnic, a last-minute dinner, or when you want to indulge yourself with something good without turning on the stove.

Summer Charcuterie Board Recipe
Start preparing the summer charcuterie board by washing the nectarine. I left the skin on, but you can remove it if you prefer.
Slice it into wedges and arrange them at the edges of the board.Continue with the prosciutto.
Also place the washed and halved cherry tomatoes on the board.Place the rest of the cold cuts next to the tomatoes: rolled pancetta on one side and Piacenza coppa on the other.
In the center, place the halved buffalo mozzarella.Thinly slice the Romanesco zucchini with a knife or mandoline.
Roll up the slices and place them around the buffalo mozzarella.
Season to taste with extra virgin olive oil and black pepper.
Serve the summer charcuterie board immediately.

FAQ
Can I prepare the summer charcuterie board in advance?
Yes, you can prepare it up to an hour in advance, keeping it in the fridge covered with plastic wrap. Add the fruit and mozzarella only at the last moment to keep them fresh.
How to substitute the cured meats for a vegetarian version?
You can use hummus, aged cheeses, nuts, olives, sun-dried tomatoes, pickled vegetables, and grilled vegetables. The important thing is to balance textures and flavors.
What fruit can I use other than the nectarine?
Apricots, figs, melon, grapes, or strawberries are excellent alternatives. Choose ripe but not too juicy fruit so as not to wet the other ingredients.
What to pair with the summer charcuterie board to drink?
A chilled white wine, a dry sparkling wine, or a rosé. A light cocktail or fruit-flavored water are also great options.
