- 3.5 oz piccadilly tomatoes

Start preparing the summer rice with chicken, corn, and avocado by cooking the rice by absorption in a pot or rice cooker in 420 ml of water.
Let it cool slightly.
Extract the pulp from a ripe avocado and add it to the rice, mixing well.
Cut the tomatoes into quarters or eighths depending on their size.
Add them to the rice and mix again.Drain the corn well and add it to the bowl with the rest of the ingredients.
EXTRA STEP: cook the corn in the pan for 4-5 minutes with a little oil to make it slightly toasted.Cook the chicken, you have total freedom of choice here: you can boil it, steam it, or like me, cook it in a slow cooker for 3 hours.
