The tzatziki sauce is a Greek-origin sauce made of yogurt, cucumbers, and garlic, very easy to prepare and great to substitute mayonnaise when looking for something fresher and lighter. This sauce can be paired with meat and fish and is perfect to be served with a vegetable crudité platter.

Ingredients
- 1/2 cup Greek yogurt
- 1 1/2 cucumber (about 5 oz)
- 1 clove garlic
- 1 tbsp extra virgin olive oil
- 1 tsp red wine vinegar

Tzatziki Sauce Recipe
Start the preparation of the tzatziki sauce by washing and peeling the cucumber.
Grate it into a bowl and then squeeze it with your hands to remove its water.Put the Greek yogurt in a bowl and mix it with a spoon or hand whisk until it becomes creamy.
Place the squeezed cucumber in the bowl with the yogurt.
Add one grated garlic clove as well.Mix well to combine the two ingredients.
Season the sauce with salt, extra virgin olive oil, and red wine vinegar.
If you like, you can also add some ground black pepper.Mix again and let it rest in the fridge for at least two hours (preferably three) so the sauce can thicken.
Serve the tzatziki sauce or store it in the fridge for 2-3 days.

Tips: as you can see the recipe requires few fresh ingredients, but if you prefer, there are specific seasonings in the market for this sauce that contain garlic and dill.
