Ingredients — Carnival Masks

  • 2 1/3 cups 00 flour (or all-purpose flour) (approximately 10.6 oz / 300 g)
  • 2 eggs
  • 3/4 cup granulated sugar (about 5.3 oz / 150 g)
  • 1/2 cup butter (about 4.2 oz / 120 g)
  • 1 lemon zest (grated)
  • 1 teaspoon baking powder
  • pinch salt
  • 3/4 cup powdered sugar (icing sugar) (about 3.5 oz / 100 g)
  • 2 tablespoons water
  • as needed food coloring
  • as needed colored sprinkles

Steps — Carnival Masks:

  • Prepare medium-sized mask shapes on a sheet of paper and cut them out carefully.
    Make the shortcrust pastry:
    In a bowl, work the butter together with the sugar.
    Then add the flour, the lemon zest and the salt.
    Work everything well until you obtain a smooth, homogeneous dough.
    Seal the dough ball in plastic wrap and let it rest in the refrigerator for 30 minutes.
    Meanwhile, prepare the water-based glaze:
    Bring the water to a boil and pour it into a bowl with 100 g of powdered sugar.
    Whisk and add the food coloring.
    Let it cool.
    Roll out the shortcrust dough to a thickness of about 3/8 inch.
    Place the paper shape on top and, using a sharp knife or a toothpick, cut out the silhouette.
    Once you have all the little masks, bake in the oven at 392°F for 10 minutes.
    Let them cool and proceed with the decorations.
    Brush on the glaze with a pastry brush and place the sprinkles on top.
    You can have fun with the decorations — just a bit of imagination and patience!
    Before eating the cookies, let the glaze dry.

You can store these delicious cookies in an airtight container for a few days or alternatively in food-safe bags.

An equally delicious variation is to replace the glaze with melted dark chocolate and then decorate with sprinkles.
