Ingredients
- 1 1/2 cups corn couscous
- 1 cup water
- 7 oz feta
- 5 cups arugula (about 100 g)
- 1 cup cherry tomatoes
- 15 pitted olives
- 1/4 Tropea red onion
- 4 tbsp extra virgin olive oil
- to taste salt

Steps
Preparing Greek-style Couscous is very easy and quick.
First, place the precooked couscous in a bowl with one tablespoon of oil, and after bringing the water to a boil, pour it over the couscous.
Cover the bowl and let it absorb all the liquid for about 4–5 minutes.
Meanwhile, rinse and cut the cherry tomatoes and the feta into cubes.
Chop the olives, the onion, and the previously washed arugula.
Season everything with salt and oil.
After the couscous has rested, fluff it with a fork to separate the grains and combine it with the other ingredients.
Mix and place in the refrigerator to rest for about half an hour to let the flavors meld.
