Ingredients Soft Chocolate Cookies:

  • 7 oz dark chocolate
  • 2 1/8 cups all-purpose flour
  • 5 tbsp butter
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 sachet baking powder (about 1 3/4 tsp, half a standard packet)
  • 1 pinch salt
  • 1 sachet vanillin (vanilla powder)

Steps for Soft Chocolate Cookies:

  • Melt the chocolate in a double boiler with the butter.
    Meanwhile, sift together the flour and baking powder, add the salt, the vanillin and the sugar, and mix.
    Incorporate the eggs into the chocolate and then add the flour mixture you prepared with the other ingredients.
    Knead well to combine everything, then place the dough in the refrigerator, covered with plastic wrap, for about one hour.
    Take small portions of dough and form balls, roll them in granulated sugar and place them on a baking sheet lined with parchment paper, spaced well apart.
    Bake the cookies in a preheated oven at 356°F for 10–12 minutes.

A variation of the soft chocolate cookies is to roll the dough balls in powdered sugar instead of granulated sugar to obtain a striking color contrast.
