They are the classic street food sweets that bring back memories of adolescence: often they are sold at local fairs and amusement parks, hence the name. I remember these delicacies very well: the greasier and more sugary they were, the more I liked them!
Easy and simple, to make the amusement park doughnuts you need just a few ingredients that we all surely have at home: flour, milk, sugar, oil (or butter), and yeast. Just let the dough rise, divide it into balls, and before frying, flatten them with your hands so that the edges are thicker and softer and the center is thinner.
They are perfect to enjoy just fried. If any are left (very unlikely), store them covered with plastic wrap at room temperature and, before eating them, warm them for a few seconds in the microwave.
They are delicious and disappear quickly: I didn’t have time to drain them, and they disappeared right under my nose. Try them with Nutella too!!!

- 2 cups flour
- 1 tsp dry yeast (or 1/3 cube of fresh yeast)
- 2/3 cup milk (at room temperature)
- 2 tbsp sugar (+ extra for sprinkling)
- 1/2 lemon (untreated – grated zest)

HOW TO MAKE THE AMUSEMENT PARK DOUGHNUTS RECIPE
First, prepare the dough. Pour the flour, sifted, into the stand mixer (or a bowl), add the milk and yeast and start kneading energetically. Then add the sugar, the grated lemon zest, oil, 1/2 teaspoon of salt, and continue kneading for about8 – 10 minutes.
You should obtain a smooth and homogeneous dough. Form a ball, cover it with a cloth, and let it rise for about 2 hours or until it doubles in volume.
After the rising time, place the dough on a work surface and divide it into about 6 – 7 balls, depending on the size you want. I divided it into 7 balls, each weighing about 2.4 oz. Let them rest for about half an hour.
Once ready, heat the oil on the stove to a temperature of 340°F (maximum 356°F); flatten the balls with your hands, pressing them well in the center and leaving the edges a bit thicker, and plunge them one at a time into the hot oil, turning them occasionally.
Once golden, remove the excess oil with kitchen paper, and roll them while still warm in granulated sugar, so they soak up the sugar well and serve immediately.

Storage
Even though I recommend consuming the doughnuts while they are nice and hot, just covered in sugar, you can store them in an airtight container at room temperature for 1 – 2 days, if they last that long. If you have leftovers, I recommend warming them for a few seconds in the microwave to make them warm.
Tips and Suggestions
1) Once you have finished kneading, when you need to let the dough rise for at least 2 hours, you can also place it in the refrigerator overnight, covered with plastic wrap. This way, the next day, just take it out of the fridge, leave it at room temperature for at least half an hour, and then it will be ready to use.
2) Once the doughnuts are cooked, roll them while still warm in the granulated sugar, so they soak up the sugar well. Once cold, it won’t be possible anymore.
3) Frying tips. Prepare a high-sided pan, pour in plenty of oil and heat it over high heat, bringing it to a temperature of about 340 – 356°F, not beyond, otherwise, the doughnuts would cook quickly on the outside but not internally.
You can check the oil temperature with a kitchen thermometer like this one, but if you don’t have one, test with a toothpick: if, when you immerse it, bubbles form around it, it means it’s ready.
4) The ideal oil for frying is extra virgin olive oil, but given the high costs, you can still opt for peanut oil, which also has high resistance and is therefore usable for frying.
5) You can also bake the doughnuts in the oven at 340°F, in static mode, for about 10 – 15 minutes. Be careful about the cooking: they should not brown too much but remain soft and golden. Or in an air fryer: after spraying them with oil, cook them at 320°F for about 8-10 minutes, turning them halfway through cooking.
6) You can make them without a stand mixer, simply by first dissolving the yeast with a bit of warm milk, taken from the total, and 1 teaspoon of sugar. On a work surface, sift the flour and arrange it in a well, then add the dissolved yeast, the rest of the milk and sugar, lemon zest, oil, and salt. Knead energetically and continue according to the instructions written in the recipe above.
