Ingredients

  • 14 oz salmon
  • 1.3 lbs potatoes
  • 7 oz shrimp tails
  • 5 anchovies in oil
  • 1 onion
  • 1 clove garlic
  • 1.4 oz sun-dried tomatoes in oil
  • 3.5 oz olive oil
  • to taste salt
  • to taste thyme ((or parsley))

To make the Baked Salmon with Potatoes and Shrimp recipe, you need:

  • 1 Baking dish
  • 1 Electric Grater

Preparation

  • First, rinse the salmon under running water and pat it dry with paper towels. Remove the shell from the shrimp tails, eliminate the dark intestinal vein, rinse and set aside.

  • At this point, peel and wash the potatoes, pat them dry, and slice them into rounds about 1/8 inch thick (I used the electric vegetable slicer), then peel and chop the onion as well. Pour a tablespoon of oil into a baking dish that can go to the table. Lay a layer of potatoes on the bottom, slightly overlapping them, salt them, and drizzle with a little oil.

  • Place a layer of salmon, cut into pieces, on top, distribute part of the shrimp tails (set aside 5 – 6), the sliced onion (set a little aside to sauté the shrimp tails for the end), a couple of sun-dried tomatoes cut into cubes or strips, and a few pieces of anchovy.

  • Cover with a second layer of potatoes, drizzle with a little oil and pour in a glass of water (not full).

  • Bake at 340°F for about 60 minutes: the potatoes should be golden and well-cooked.

  • Meanwhile, sauté the shrimp tails you set aside in a pan with a little oil, the garlic, the remaining onion cut into pieces, the parsley, the sun-dried tomatoes: once ready, decorate the preparation with the salmon and potatoes.
