Baked Smashed Potatoes with Ham and Cheese

These Baked Smashed Potatoes with Ham and Cheese are delicious. Rustic and tasty, they are perfect as a side dish paired with a meat or fish dish, but also as finger food at a buffet if prepared with very small potatoes.

They are very easy to prepare and everyone likes them: kids love them!!

The preparation is really very simple. I boiled the potatoes, then smashed and seasoned them first with extra virgin olive oil, salt, and rosemary, and put them in the oven for a few minutes. Then, I topped them with grated cheese and diced ham and put them back in the oven until the cheese melted. Fabulous!!!

An easy and inexpensive side dish that you will make and remake many times. Try them, I’m sure you’ll love them too.

Ingredients

  • 6 potatoes (small, about 3.2 – 3.5 oz each)
  • 1.8 oz mozzarella for pizza (or scamorza, fontina, provola …)
  • 1.8 oz cooked ham (diced, or bacon or speck)

  • to taste salt

  • to taste breadcrumbs

To make the recipe for Baked Smashed Potatoes with Ham and Cheese, you will need:

  • 1 Pressure Cooker
  • 1 Baking Tray
  • Parchment Paper
  • 1 Electric Grater

Steps

  • First, cook the potatoes. Wash them and boil them, with skin, in plenty of water for 18-20 minutes. If using a pressure cooker, start timing from when it begins to whistle: about 10 – 11 minutes. Cooking time depends on the size of the potatoes.

  • Once cooked, let them cool slightly (just so you don’t burn yourself) and place them on a baking tray lined with parchment paper, a little apart from each other.

    Meanwhile, preheat the oven to 392°F, on “fan” mode.

  • Using a glass with a small bottom (or a cup), smash the potatoes, remove the skin on top, drizzle them with a little extra virgin olive oil, season them with a little salt and rosemary, and bake in the preheated oven for about 7 – 8 minutes.

  • In the meantime, grate the cheese (to do it quickly I always use this electric grater which is also excellent for slicing vegetables) and dice the ham (or use the ready diced one).

  • Once the cooking time has passed, remove the tray from the oven and top the potatoes first with the grated cheese and then with the diced ham, drizzle a bit more oil, a little breadcrumbs, and place the tray back in the oven for another 7 – 8 minutes on “grill” mode, until the mozzarella has melted.

  • Note: Cooking times vary based on the size of the potatoes: mine were small. Judge by eye.

Tips and Suggestions

Potatoes: As I mentioned, cooking times vary depending on the size of the potatoes themselves, both when boiling and during the oven process.

Arrange the potatoes on the baking tray so that you can smash them well: if they are thinner, they will cook faster and be tastier.

Prefer new potatoes, with thinner skins. I removed the skin on top after smashing them.

Filling: I used mozzarella for pizza and ham, but you can fill the potatoes with your favorite ingredients or whatever you have in the fridge.
