The recipe is very simple and fast. Just a handful of ingredients and they are ready: the time to cut the zucchini, season them, and bake them. Quick, right? I flavored them with thyme, but they are also perfect with oregano, rosemary, marjoram, chives … or, if you want a bolder taste, with paprika, turmeric, or chili.

  • 4 zucchini
  • breadcrumbs
  • 2 tablespoons grated parmesan cheese
  • to taste extra virgin olive oil
  • salt
  • pepper

To make the Baked Zucchini Sticks recipe you will need:

  • 1 Cutting Board
  • 1 Baking Tray

Steps

Turn on the oven to 392°F, in “fan” mode.

  • First, wash the zucchini, pat them dry with paper towels or a cloth, remove the ends, and cut them in half lengthwise, then again into strips; then, halve them.

  • Put them in a bowl, sprinkle with the breadcrumbs (3 – 4 tablespoons as desired), the grated parmesan cheese, the thyme, season with salt and pepper; drizzle with extra virgin olive oil and mix them (with your hands), until all ingredients are well incorporated.

  • Line a baking tray with parchment paper, arrange the zucchini neatly, ensuring they do not touch each other, sprinkle with some breadcrumbs and a drizzle of extra virgin olive oil and bake them in the preheated oven for about 25 – 30 minutes, until they are golden and crispy. Halfway through cooking, turn them.
