The recipe is really simple: I coated the chicken slices first in flour, then in beaten egg, and finally in grated and squeezed potatoes, seasoned with olive oil, salt, and pepper and flavored with rosemary. Then, I fried them in extra virgin olive oil until golden brown.

Ingredients
- 4 slices chicken
- 4 potatoes (medium size – 3 if large)
- to taste flour
- 1 egg (or 2 if small)

Steps
First, peel the potatoes, wash them, and grate them with a medium-large hole grater or with an electric vegetable chopper: squeeze them to remove the water.
Place the potatoes on a plate and season with extra virgin olive oil, chopped rosemary to taste, salt, and pepper, mix well with your hands (or a fork).
Take the chicken slices, coat them first in flour, then in egg, and finally in potatoes, making sure they adhere well.
Meanwhile, place a frying pan with olive oil on medium/high flame and heat it. When the oil is hot, cook the chicken slices on both sides until golden brown, turning them occasionally with 2 spatulas.
I served the chicken slices with a nice salad and the remaining grated potatoes after frying them in the pan.
