HOW TO MAKE CHRISTMAS COOKIES TO GIFT
First, take the butter out of the fridge at least 1 hour before starting, then weigh all the ingredients you need for the recipe.
Put the butter and sugar in the bowl of the stand mixer and start mixing. Add the eggs one by one, and as soon as they are incorporated, add the flour, the cocoa powder (or omit it) and a pinch of salt. Continue mixing just enough to integrate everything well.
Form a ball, wrap the dough with plastic wrap, and let it rest in the fridge for about 2 hours: this step is crucial because the gluten in the dough needs to rest and relax.
Preheat the oven to 356°F in static mode.
After the indicated time, roll out a sheet of parchment paper on the pastry board and flour it (or work directly on the floured board).
Then place the shortcrust dough and roll it out with the rolling pin into a sheet about 1/8 – 3/16 inches thick. To get a uniform thickness, I used spacers on the sides of the dough and then rolled it with the pin.
Next, cut the cookies with your preferred cookie cutters and place them on baking sheets lined with parchment paper. I used tree and snowman cookie cutters.
Bake them in the preheated oven for about 12 – 15 minutes. Once baking is complete, remove from the oven and let them cool well.
While the cookies are cooling (given the season, to speed up cooling, I placed them outside on the balcony), melt the white chocolate in a bain-marie or for a few minutes in the microwave, stirring well until fully melted.
Put the melted chocolate in a piping bag and decorate the cookies as desired; let them cool.
Take a glass candy dish you intend to gift, fill it 2/3 with granulated sugar, insert the decorated cookies pressing slightly to fit them well, and finally, add some meringues and colored sprinkles.
